BARISTA TIP #6 You can only control 4 elements of brewing…….1) Weight of coffee that you are going to brew- notice I said "weight of coffee" how many grams are you putting in the brewing basket "every time"   2) how fine is the grind "does it look like baby powder or sand"   3) the water temp   4) time the brew runs.  We recommend you brew at temps between 195-205; if you can calibrate your equipment set brew temp dead on 200 degrees.  Each time you brew, if you weigh out exactly the same amount, grind to the same fineness, set the brew temp to 200, then the only thing left is to find the sweet spot where your equipment produces the best flavor for you.....ie what is the optimum time "in seconds" for your equipment to produce the taste you desire.  Brew times that are too short will leave your coffee under-extracted/flat and you will dump the subtle flavors into the trash can.  Brews too long will be bitter with a burned taste.  Find that balance and you have tuned your machine.
